Spicy Tofu Sushi Roll
I love sushi but I don't love how expensive it can be to get all the ingredients. This sushi is a great way to make sushi fun, healthy, and easier on a budget than traditional raw fish sushi.
Ingredients:
5 nori sheets (I like to cut the top 1/3 off of each sheet and use the remaining 2/3 for a smaller size roll)
3 cups rice
7 oz Firm tofu
1 cucumber
1 ½ teaspoons ground ginger
¼ cup mayo
1 tablespoon sriracha
½ teaspoon garlic powder
3 tablespoons rice vinegar
¼ cup toasted sesame seeds
Directions
cook rice, adding rice vinegar and 1 teaspoon of ginger to the water
cut cucumber into long, thin strips
Crumble tofu into a medium mixing bowl
Add mayo and sriracha to the tofu, gently stir to combine
Add remaining ½ teaspoon of ginger and garlic powder to the tofu mixture, stir to combine
Cover sushi rolling mat with plastic wrap
Place nori paper on a clean counter
scatter the rice over the nori sheet and pat down into an even layer. (I like to get my hands a bit wet to prevent the rice from sticking too much)
sprinkle sesame seeds over rice
Place your sushi mat covered in plastic wrap on top of your nori and rice (rice side up)
Gently flip your nori over so the rice is face down on your mat
Spoon a even line of spicy tofu across the nori horizontally
Add cucumber alongside spicy tofu
Using the sushi mat, roll the nori sheet over your tofu and cucumber (roll away from you and maintain a tight curl and you roll) keep rolling until the whole roll is wrapped tight
using a very sharp knife cut the roll into about 6-8 pieces
Toasting Sesame Seeds:
Place a dry (no oil) frying pan over medium heat
Add sesame seeds
Shake or stir pan often until seeds are golden brown (about 3 minutes)
