Protein Pancakes - Peanut Butter Banana


Makes approximately 3 pancakes


Ingredients:

- 1 scoop vanilla protein powder

- 2 tbsp. coconut flour

- 1/2 c unsweetened almond milk

- 3 tbsp. liquid egg whites (or 1 egg white separated)

- 1 tsp cinnamon

- 2 tbsp. powdered peanut butter

- 1/2 tsp baking powder

- 1 banana

optional: Greek yogurt and chia seeds


Directions:

- mix almond milk, egg whites, protein powder, and coconut flour together

- add cinnamon and baking powder

- spray a heated pan with cooking spray

- scoop 1/3 pancake batter into the pan, spread with a spoon if needed

- cook bottom side and flip pancake. repeat with remaining batter

- mix peanut butter powder with 2-3 tbsp. water until a smooth consistency

- place sliced bananas on pancakes and drizzle with peanut butter mixture

optional: top with Greek yogurt and a sprinkle of chia seeds and/or cinnamon
