Pina Colada Oatmeal
This is a perfect post workout oatmeal recipe. Between the Protein and Carbs for muscle repair, and the electrolytes from the coconut water, this breakfast is a great way to bounce back from your training session and tackle the rest of your day!
Ingredients:
½ cup oats
1 cup coconut water
1 scoop vanilla protein powder
¼ cup pineapple
2 tbsp. coconut
Greek yogurt (I used Vanilla Coconut flavor)
Directions:
add oats and coconut water in a microwave safe bowl, microwave for 2 minutes
stir in protein powder until well incorporated, add more coconut water as needed to desired thickness
add coconut and pineapple, stir together
top with Greek yogurt
Optional: place more coconut and cut pineapple on top. (I also enjoy a sprinkle of chia seeds with this recipe)
Benefits of Coconut Water Post- Workout
- Coconut water is an excellent alternative to sports drinks like Gatorade or Powerade. It provides important electrolytes like potassium, sodium, and manganese without all the added sugars and sodium of a processed sports drink
