Peanut Butter Banana Bites (toddler friendly)
Whole grains, high in protein, tasty and easy to eat. These are a perfect snack for kids or, as is my experience, munchy college kids.
Ingredients:
½ c peanut butter
¼ cup peanut butter powder (ex: PB2 or PBFit)
2 bananas
1 cup oat flour
2 teaspoons cinnamon
1 teaspoon baking powder
Directions:
preheat oven to 350 degrees
mash bananas into a smooth consistency
add peanut butter, stir to combine
add oat flour, powdered peanut butter, cinnamon, and baking powder, stir to combine
let dough sit for 5 minutes (this allows the oat flour to soak up some of the moisture)
scoop tablespoon size portions of dough and roll into a ball
place bites on a cookie sheet evenly spread out (they will not spread or rise a lot so you can place them as close as 1/2 inch apart)
using a fork, flatten dough balls slightly
place in oven and bake for 7- 10 minutes or until bottoms begin to brown
remove and let cool
