Orange Balsamic Winter Salad
Ingredients:
2 cups greens (I like a mix of kale and Spinach)
1 serving Chicken Breast
1 small pear
1 orange
¼ cup pomegranate seeds
2 tablespoons pepitas
2 tablespoons chopped pistachios
1 tablespoon chia seeds
2 tablespoons balsamic vinegar
½ teaspoon dried basil
½ teaspoon oregano
½ teaspoon garlic salt
pinch of black pepper
Chicken Directions:
preheat oven to 375 degrees Fahrenheit
season chicken with basil, oregano, garlic salt and a sprinkle of black pepper
bake for 20-40 minutes until fully cooked (this will depend on the shape and size of the piece of chicken)
remove from oven and set aside to cool
slice into thin strips
Dressing Directions:
zest the orange
in a small bowl, combine zest, balsamic vinegar, chia seeds, and the juice of ½ of the orange
Salad Directions:
In a salad bowl add greens
core and dice pear
add pear, pomegranate seeds, pepitas and pistachios to your greens
pour dressing over the salad and toss to evenly dress and mix ingredients
add chicken over top of salad
