High Protein Baked Oat, Cheesecake Trifle
Baked oatmeal, check. Protein Cheesecake, check. Colorful fruit, check. Can it get better? No
Makes 4 servings
Ingredients:
Baked oatmeal -
- 1 c unsweetened applesauce
- 1 c rolled/instant oats
- 1 egg
- 2 tbsp. coconut flour (or alternative)
- 1 scoop protein powder
- 1 tsp almond extract
- 1 tsp baking powder
- 1/2 tsp baking soda
Cheesecake filling -
Option 1:
- 1 cup plain greek yogurt
- 1 package low-fat cream cheese
- 1/2 cup almond milk
- 2 tbsp. sugar free cheesecake pudding mix
Option 1: This choice uses the sweetness from the flavored yogurt rather than the sugar free jello mix if you prefer not to use it
- 1 cup vanilla greek yogurt
- 1 package low-fat cream cheese
Fruit -
This is up to you! I chose strawberries and blackberries for a red, white, and blue fourth of July Treat but, you can substitute any fruit you choose.
Directions:
preheat oven to 350 degrees
Add oats to food processor or blender, pulse until finely ground (oat- flour)
add ground oats, egg, applesauce, coconut four, protein powder, and almond extract into a bowl, mix until well combined
mix in baking powder and baking soda, this will cause the dough to puff up a little, let it and don't try to mix the air out.
spray 8 inch cake round or other baking dish with cooking spray
pour oat batter into the dish and place in the oven
bake for about 10 min ( may differ slightly depending on your protein powder), remove from oven and let cool, then dice into inch sized cubes
prepare preferred cheesecake filling option
wash and cut fruit
In glass, place a layer of baked oat cubes, then scoop or pipe cheesecake filling on top, add fruit and repeat!
