High Protein Air Fried Pizza Pockets
Bite sized pizza but make it protein? Challenge accepted.
Ingredients:
2 eggs
1 cup plain nonfat greek yogurt
2 cups flour ( I use a gluten free substitute)
1/4 cup almond flour
2 teaspoons dried basil
1 cup tomato sauce
2/3 cup shredded cheese
3 tablespoons nutritional yeast
1/3 cup turkey pepperoni
Directions:
in a large mixing bowl, combine yogurt and one of the eggs.
add flour and almond flour, mix until a ball of dough is formed. Add more flour as needed,
add dried basil, knead to combine
in another small bowl, combine tomato sauce, cheese, turkey pepperoni and nutritional yeast. Mix until well combined.
lightly flour a clean counter space
place 1/3 of your dough onto the counter, dust with flour and roll out to 1/8 inch thickness
cut into 1x2 inch rectangles
spoon tomato sauce mixture onto one half of the rectangle of dough (try to avoid the filling spreading to the edges of the dough
beat 1 egg and brush along the edges of dough around the filling
fold the dry half of the dough over your filling and pinch down all four sides
repeat with the rest of your dough
brush each pocket with beaten egg
fill an air fryer basket with pizza pockets until the base is covered (but do not stack!)
air fry at 400 degrees for 6 minutes
repeat with the rest of your pizza pockets
Low Calorie Ranch Dip
Ingredients:
1/4 c nonfat plain greek yogurt
2 teaspoons ranch seasoning mix
Directions:
combine and mix until even consistancy
