Healthy Lemon Bars
These are a perfect treat for the summer! Lemon is my favorite flavor when it comes to dessert and these lemon bars definitely hit the spot.
Base Ingredients:
2 cups rolled oats
1/4 cup honey
2 tablespoons peanut butter
1/4 cup coconut oil
1/4 cup water
1 scoop vanilla protein
Lemon Topping Ingredients:
2 lemons
1 tablespoon corn starch
1/4 cup flour
5 eggs
1/4 cup plain greek yogurt
1/2 cup honey
Directions:
Preheat oven to 350 degrees
in a large mixing bowl, combine oats, honey, peanut butter, melted coconut oil, and water
stir to combine
add protein powder and mix again
spray a 9x13 pan with nonstick cooking spray
spread crust mixture evenly across the base of the pan
bake for 5 minutes
in a large mixing bowl, combine, honey eggs. wisk until smooth
add the zest and juice of both lemons, wisk until combined
add yogurt, corn starch, and flour. wisk until smooth
pour over baked crust
return to oven for 18 minutes
let fully cool before cutting
