Healthy Caramel Truffles
These little treats come together so quick and easy! Using dates and nut butter, these pack a hunger crushing punch as well as some (often much needed) energy.
Ingredients:
5 large pitted mejdol dates
1 cup water
2 tablespoons almond butter
3 tablespoons almond flour
1 pinch of salt
1/2 c dark chocolate
Directions:
In a microwave safe bowl, add 1 cup water and dates
microwave for 2 minutes
with a fork or a pair of tongs, remove each date and place into a food processor
add almond butter, coconut oil and almond flour to the food processor
pulse until a smooth mixture forms
add salt and process again
scoop out 1/2 tablespoon size balls and lightly flatten them onto wax paper
place into freezer for 5 minutes to cool
melt chocolate and 1 teaspoon coconut oil until smooth
dip each caramel and place back onto sheet of wax paper
chill or let sit until chocolate sets
