Healthy Caramel Truffles

These little treats come together so quick and easy! Using dates and nut butter, these pack a hunger crushing punch as well as some (often much needed) energy.



Ingredients:

  • 5 large pitted mejdol dates

  • 1 cup water

  • 2 tablespoons almond butter

  • 3 tablespoons almond flour

  • 1 pinch of salt

  • 1/2 c dark chocolate

Directions:

  1. In a microwave safe bowl, add 1 cup water and dates

  2. microwave for 2 minutes

  3. with a fork or a pair of tongs, remove each date and place into a food processor

  4. add almond butter, coconut oil and almond flour to the food processor

  5. pulse until a smooth mixture forms

  6. add salt and process again

  7. scoop out 1/2 tablespoon size balls and lightly flatten them onto wax paper

  8. place into freezer for 5 minutes to cool

  9. melt chocolate and 1 teaspoon coconut oil until smooth

  10. dip each caramel and place back onto sheet of wax paper

  11. chill or let sit until chocolate sets
