Health Gingerbread Cookies (Almond Flour)
A healthy and (optional) gluten free way to enjoy the Christmas season!
Ingredients:
1 1/2 almond flour
1 cup gluten free flour substitute (or regular flour)
1/2 cup honey
1 egg
1/4 teaspoon baking soda
1 teaspoon vanilla extract
2 tablespoons molasses
1 1/2 teaspoon ginger
2 teaspoons cinnamon
1 tablespoon brown sugar
Directions:
preheat oven to 350 degrees
in a mixing bowl, combine almond flour, and flour
mix in honey, molasses, brown sugar, and 1 egg
add vanilla, baking soda, ginger and cinnamon. Mix until well combined and dough forms a ball (if the dough is too loose, add more flour until it forms a moldable ball of cookie dough
roll out dough on a clean counter dusted with flour (roll about 1/5 of an inch thick)
cut dough and place on a baking sheet sprayed with non stick spray
bake for 8-10 minutes or until the bottoms are browned
