Granola Yogurt Cups
Ingredients:
2 cups rolled oats
1/2 cup creamy peanut butter
2 tablespoons honey
1/4 cup egg whites
Directions:
preheat oven to 350 degrees
In a large mixing bowl, combine oats, peanut butter and honey
stir to combine. (this will form a crumbly texture)
add egg whites 1 tablespoon at a time until a moldable dough forms (if needed, continue to add 1 tablespoon of water at a time)
spoon oat mixture into a greased muffin tin (this recipe makes 8 granola cups)
with clean hands, mold dough around the edges of each cup
bake for 8-10 minutes
set aside to cool
remove from muffin tin
spoon yogurt into granola cups and top with perfered fruit
