Fish Tacos
This recipe is fast and easy making it great for meal prepping or a family meal!
Ingredients:
Fish Fillets of choice (I used Tilapia but it is also great with Cod or Flounder)
1 c almond flour
3 cups chopped cabbage
1 avocado
1 onion sliced thinly
1 yellow or orange bell pepper
Cilantro
Limes
Tortillas
2 tbsp coleslaw dressing
2 tsp garlic salt
½ tsp red pepper
Salt and pepper
Directions:
Preheat oven to 375 degrees F
Slice fish fillets into long thin strips
Mix almond flour, garlic salt, red pepper, and a sprinkle of salt and pepper
Roll fish in almond flour mixture and place in baking dish sprayed with cooking spray
Place in oven and cook until fish is flaky and almond coating is browned (about 15 min depending on the type of fish and how thick your strips are)
Slice cabbage, bell pepper and onion into thin strips and add to large mixing bowl
Add chopped cilantro, lime juice, and coleslaw dressing
Slice avocado
Optional: toast tortillas in a lightly sprayed pan over the stove\
To serve, add coleslaw mix on tortilla and place fish fillets on top, add avocado and a sprinkle of cilantro
