Easy Peanut Butter Curry
I love quick and easy recipes that are also tasty! This is a good one to whip up on a week night for a satisfying dinner without too much time or dishes spent.
Ingredients:
1 1/2 pounds chicken breast
8 oz of rice noodles (measure before cooking)
1/2 cup powdered peanut butter
2 tablespoons creamy peanut butter
1 cup coconut milk
1 tablespoon corn starch
1 tablespoon curry powder
1 teaspoon cinnamon
2 tablespoons minced garlic
1 teaspoon ground ginger
1 tablespoon sriracha
1 tablespoon apple cider vinegar
1 1/2 tablespoon coriander
Directions:
dice chicken and cook in a frying pan until fully done
cook rice noodles according to package directions
in a mixing bowl, combine peanut butter powder, peanut butter, coconut milk, cinnamon, ginger, garlic, curry powder, sriracha, apple cider vinegar, and coriander.
in a separate bowl, combine corn starch with 2 tablespoons of water and mix until an even consistency is achieved
add cornstarch-water mix to peanut sauce mixture
pour sauce over cooked chicken and return to heat until the sauce boils and thickens
serve over rice noodles
