Easy Lomo Saltado
This is my favorite healthier and easier version of the popular Peruvian dish!
Ingredients:
- 1 pound of thinly cut beef (In this photo I used a precut package of Sabana de res to make it extra simple)
- 1 red onion
- 1 large tomato
- Cilantro
- 1 c uncooked quinoa
- 1/2 c chickpeas
- 3 jalapenos
- 2/3 c spinach
- 1 tbsp. minced garlic
- 4 large potatoes
- 1 tsp onion powder
- 2 tsp soy sauce
- salt and pepper
Directions:
Preheat oven to broil
Boil 1 cup quinoa in 2 cups of water until grains are soft and water is absorbed
remove seeds from jalapenos and chop into coin sized pieces.
In a food processor, combine jalapenos, onion powder, spinach, soy sauce, and chickpeas.
pulse until a smooth consistency is reached.
stir jalapeno blend into sliced meat and set aside.
Peel and cut potato's into thin strips, spray lightly with cooking spray (this helps them brown and the seasonings stick). Toss with salt and pepper and any other desired seasonings.
spread fried evenly across a greased cookie sheet and place in oven (CHECK OFTEN! by broiling the fries, the heat is only coming from the top of the oven, this means that you need to keep a close eye on them and stir them often to cook them evenly. Broiling will give them a nice crisp exterior without frying them in oil)
chop onion and tomato into medium sized wedges. Chop cilantro.
Add beef into a large pan on medium-high heat.
When the meat is about half way cooked, add tomato, onions, and chopped cilantro.
Continue stirring until meat is cooked and vegetables are softened and beginning to brown.
Salt and pepper to taste
Serve over quinoa and potatoes and sprinkle with chopped cilantro. Enjoy!
