Easy Corn Salsa
Quick and easy side dish with lots of fiber and probiotics!
Ingredients:
1 red bell pepper
1 small red onion
1 can corn
1 can black beans
2 limes
1 bunch of green onions (2/3 cup chopped)
1 tablespoon minced garlic
1/4 cup apple cider vinegar
1 teaspoon cumin
1 tablespoon garlic salt
2 teaspoons chili powder
2 tablespoons nutritional yeast (optional but recommended for protein, B vitamins, and flavor!)
Directions:
drain corn and black beans and add to a large mixing bowl
dice red onion and bell pepper
add onion, bell pepper, and sliced green onion to mixing bowl
zest both limes into mixing bowl
add nutritional yeast to salsa
squeeze the juice from both limes over salsa in the mixing bowl
add apple cider vinegar, minced garlic, garlic salt, chili powder, and cumin to the salsa
stir until well combined and evenly seasoned
