Cuban Chicken Bowl with Fried Plantains

Ingredients
1 lb. chicken
¾ cup uncooked Quinoa
1 plantain
1 mango
1/2 red bell pepper
¾ cup chopped Cilantro
4 Limes
1 cup Black beans
¼ Red onion
1 tsp cumin
½ tsp chili powder
1 tsp soy sauce
1 tbsp. minced garlic
1 orange
1 tbsp. honey
Directions:
Cook quinoa by package directions
Cut chicken into cubes and place in large mixing bowl
Add juice and zest from 2 of the limes
Add soy sauce, garlic, cumin, ½ cup cilantro, chili powder and the juice from the orange to the chicken. Stir to to coat and salt and pepper as desired
Cook chicken in a large frying pan
Drain and rinse black beans
Mango Salsa Mixture:
Dice Mango, red bell pepper, and red onion. Combine together
Add juice and zest of 1 lime, remaining and the remaining cilantro
Stir until combined
Fried Plantains:
Peel and slice plantain
Add honey, a few splashes of lime juice
Sprinkle with cumin, salt, pepper and chili powder
Mix until evenly coated
Spray or oil a pan and heat over the stove
Add plantain slices to the hot pan
Flip and cook until evenly fried
Remove from pan
Cut remaining Lime into slices and serve to serve with the dish
