Cranberry Orange Scones
I love winter baking and these scones make that love a little more nutritionally fulfilling.
Ingredients
1 egg
2/3 cup oat flour
1/3 cup almond flour
2/3 cup flour or gluten free flour substitute
2 tablespoons honey
1/4 cup plain greek yogurt
zest and juice of 1 orange
1/4 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 cup dried cranberries
Directions
Preheat oven to 350 degrees
In a large mixing bowl or stand mixer, combine oat flour, almond flour and four/gluten free substitute.
add baking powder, baking soda and cinnamon. stir until fully combined
add yogurt, honey, egg and cranberries. mix until a dough forms
spray a baking sheet with non stick spray
pat your dough into a flat circle about 3/4 inch tall
cut into triangles and spread across pan
bake for 15-20 minutes or until bottoms brown and corners become golden in color
remove and allow to cool
