Chocolate Peanut Butter Protein Eggs

A healthy take on an Easter candy classic with an extra boost of protein!



Ingredients:

  • 1/2 cup powdered peanut butter

  • 1 tablespoon creamy peanut butter

  • 1/4 cup water

  • 2 tablespoons vanilla sugar free jello mix

  • 1/2 cup dark chocolate chips

  • 1 teaspoon coconut oil

Directions:

  1. combine powdered peanut butter, creamy peanut butter, water, and jello mix in a bowl

  2. stir until combined (add more water if needed in 1 tablespoon increments)

  3. shape peanut butter dough into egg shapes and place on a cookie sheet lined with wax paper

  4. set in freezer while you prepare your chocolate

  5. combine chocolate and coconut oil in a microwave safe bowl

  6. microwave for 1 minute, remove and stir

  7. return to microwave for 20 seconds and stir until smooth

  8. dip each egg into the melted chocolate and place back onto the wax paper

  9. repeat with each egg

  10. set tray in fridge until set
