Chickpea Cookie Dough (and Cookies)
Ingredients
1 can chickpeas
1 tbsp. peanut butter
3 dried apricots or 1 medjool date
1 scoop protein
1tsp vanilla
½ tsp almond extract
3 tbsp. coconut flour
1 bar dark chocolate or 2/3c choc chips
2 tbsp. brown sugar or brown sugar substitute (stevia)
Directions:
Add date or apricots to a food processor or blender with a tablespoon of warm water, process until smooth
Drain and rinse chickpeas, place in food processor
Add vanilla extract, almond extract, peanut butter
Blend until a smooth texture
Add coconut four, brown sugar and protein powder and process again
Remove dough from food processor and stir in chocolate
To make cookies:
Add 1 egg, 1 teaspoon baking powder, ½ teaspoon baking soda and a tablespoon or two more of coconut flour and cook for about 7 minutes at 350 degrees.
