Broccoli Cheddar Protein Pasta Bake

This has quickly become a favorite weekday dinner at my house. It is super easy to prep, cover, and toss it in the oven on a busy day.



Ingredients:

  • 250 grams chickpea pasta

  • 1 pound frozen broccoli (about 5 cups)

  • 4 tablespoons cream cheese

  • 1 1/4 cup shredded cheddar

  • 1/4 cup nutritional yeast

  • 2 teaspoons garlic salt

  • 1 cup plain greek yogurt

  • 1/2 teaspoon pepper

  • 1/2 cup bread crumbs

  • 1 pound shredded chicken breast (you can add as much or as little chicken as you prefer!)

Directions:

  1. Preheat oven to 365 degrees

  2. cook and shred chicken, set aside

  3. steam broccoli until tender when pierced with a fork, set aside

  4. boil pasta to al dente and drain, set aside

  5. in a small saucepan, combine cream cheese, yogurt, nutritional yeast, garlic salt, and pepper. stir to combine

  6. place over medium heat and stir until it begins to melt together

  7. add 1 cup shredded cheese

  8. continue stirring until the sauce becomes a smooth consistency

  9. in a large mixing bowl, combine pasta, chicken and broccoli.

  10. pour cheese sauce over top and gently fold to evenly coat the mixture

  11. pour into a 9x14 pan

  12. sprinkle bread crumbs and remaining 1/4 cup of cheese evenly over the top.

  13. bake until cheese is melted and bread crumbs begin to brown (between 10-15 minutes)
