Broccoli Cheddar Protein Pasta Bake
This has quickly become a favorite weekday dinner at my house. It is super easy to prep, cover, and toss it in the oven on a busy day.
Ingredients:
250 grams chickpea pasta
1 pound frozen broccoli (about 5 cups)
4 tablespoons cream cheese
1 1/4 cup shredded cheddar
1/4 cup nutritional yeast
2 teaspoons garlic salt
1 cup plain greek yogurt
1/2 teaspoon pepper
1/2 cup bread crumbs
1 pound shredded chicken breast (you can add as much or as little chicken as you prefer!)
Directions:
Preheat oven to 365 degrees
cook and shred chicken, set aside
steam broccoli until tender when pierced with a fork, set aside
boil pasta to al dente and drain, set aside
in a small saucepan, combine cream cheese, yogurt, nutritional yeast, garlic salt, and pepper. stir to combine
place over medium heat and stir until it begins to melt together
add 1 cup shredded cheese
continue stirring until the sauce becomes a smooth consistency
in a large mixing bowl, combine pasta, chicken and broccoli.
pour cheese sauce over top and gently fold to evenly coat the mixture
pour into a 9x14 pan
sprinkle bread crumbs and remaining 1/4 cup of cheese evenly over the top.
bake until cheese is melted and bread crumbs begin to brown (between 10-15 minutes)
