Breakfast Apple Crumble
A warm and cozy fall breakfast that feels like dessert!
Ingredients:
1 cup rolled oats
1/3 cup flour (I use a gluten free substitute flour)
1/2 teaspoon salt
3 apples
1/4 cup honey divided into two 2 tablespoon portions
2 tablespoons melted coconut oil
1 1/2 teaspoon cinnamon
1/2 teaspoon allspice
2 tablespoons almond butter
1 tablespoon lemon juice
Directions:
Preheat oven to 350 degrees
peel each apple and cut into thin slices
pour lemon juice, 1 teaspoon of cinnamon, and 2 tablespoons of honey over apple slices
stir to evenly coat the apple slices
spray a 9x9 pan with non stick spray. pour apples into pan
in a separate bowl combine oats, flour, 1/2 teaspoon cinnamon, allspice, almond butter, 2 tablespoons honey, and coconut oil. stir to combine
crumble over top of your apples in an even layer
optional: sprinkle sliced almonds over crumble before baking
cover with tin foil and bake for 30 minutes
remove foil and bake for 5-10 more minutes until apples are softened and crumble is gently browned
Serve topped with vanilla or honey greek yogurt or enjoy on its own!
