Avocado Toast (with Calorie/Macro Hack)
Everyone loves avocado toast! With this easy hack you can enjoy it with more protein and less calories!
Makes 2 servings
Ingredients:
two pieces of bread
2 eggs
1/2 of an avocado
1/3 cup low-fat cottage cheese
1 lime
1/2 teaspoon salt
1 small tomato
Optional but delicious ad ons:
thinly sliced red onion
balsamic vinegar
Directions:
place avocado and cottage cheese together in a bowl
using a fork, mash avocado and cottage cheese together until well combined
add salt and the juice of 1/2 of a lime, stir
toast bread
thinly slice tomato
heat a frying pan over medium-high heat, spray with non stick spray
crack eggs onto pan and sprinkle with black pepper
let the whites cook until they are strong enough to flip
flip the eggs over and cook until whites are cooked but yolk is still soft
spoon avocado/cottage cheese mix unto toasted bread and spread to the edges
place sliced tomato on top
using a spatula, gently place 1 egg on each toast
